Honey BBQ-Marinated Chicken Drumsticks

Makes 4 servings

  • 1 lb. chicken drumsticks
  • 1/2 cup ketchup
  • 1/2 cup honey
  • 1/4 cup vegetable oil
  • 2 Tablespoons soy sauce
  • 2 teaspoons lemon juice
  • 1/4 teaspoon crushed peppercorns
  • 1/4 teaspoon hot chili sauce Salt, to taste

Place chicken in large shallow dish. Add ketchup, honey, soy sauce, lemon juice, and vegetable oil, along with pepper, chili sauce, and salt. Cover the dish and let it stand for about 1 hour in the refrigerator. Prepare to grill, then grill to desired doneness.

Serving Suggestion: May be served with baked sweet potatoes and beans, along with a salad of cucumbers, carrots, and red sweet pepper strips.


Honey – Peanut Butter Cookies

Makes 60 cookies

  • 1/2 cup shortening
  • 1 cup creamy peanut butter
  • 1 cup thick honey
  • 2 eggs, lightly beaten
  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

In a bowl, mix shortening, peanut butter and honey. Add eggs; mix well. Combine flour, sugar, baking soda, baking powder and salt; add to peanut butter mixture and mix well.

Roll into 1- to 1-1/2-in. balls and place on un-greased baking sheets. Flatten with a fork dipped in flour. Bake at 350° for 8-10 minutes.
